I probably shouldn't argue with a chef, but in the health and food prep courses I've taken it's generally a VERY bad idea to eat any kind of uncooked meat. It's about as safe as pricking yourself with a used syringe needle.

@Nagneto If you know it is fresh, clean, and not contaminated with harmful bacteria it is safe to eat raw. Unfortunately, this counts out any meat you could buy at the market and most butcher shops. Unless you know a butcher who trusts a rancher who you would trust your life and livelihood, you will be risking some GI distress, but usually it won't be anything that can kill you. If there was a e.coli outbreak, then it wouldn't matter if you ate it raw or medium rare. You'd get hit with it.
