What he does is throttle down enough and slows down then slowly turns, as you throttle down your jet slows like you are going to land(You can see his wheels out on some of them) then just boost up to break it.

@Snowwie88 It does. I've killed several tanks with the machine guns from the jet. It takes a long time. Might have to make 3 passes if you don't have a good angle on it but it is possible.

Real life pilot here. This is accomplished using the rudder which controls the yaw axis of flight. (look at the vertical stabilizer on the tail, you can see the control surface is deflected.) The "drifting" is what is called a slip or a skid, and is a symptom of uncoordinated flight.
