I'm going to back you up, that's how you fillet a salmon. I was a chef for 7 years and I've seen people take 1 hour to do what he did in 2min and still waste more than he did. Good job. The carcass can be cleaned and used to make fish stock, fish gumbo, or bait. I personally like the fatty belly meat to smoke....don't throw that out! You are a pro, the rest of these people just have a different perspective.
You got three fillets of that salmon, great! You caught a salmon and you filleted it and you had only 40% left of that fish, that's wasting. Usually the guts are 15%, fishbones 22-25% and the rest should be fillets. The knife that you have is a gutting knife, because there is a spoon. Get a filleting knife, it's much easier. ;)

@gewglesux yes the fillets was clean,but alot of meat was left on the bones.by the way,the heads and bones are good food also.you cannot make a good salmon soup without using the bones and heads
@gewglesux its traditional in norway to make a creamy soup,its easy for you to google recepies on it.the lower part of the belly that he threw away is the fatest part of the fish,but also the part that is healtiest and best tasting in soups...lots of omega3 in those parts:)

@fullsjuk You got it wrong pal. As a sportsman I've taught my kids not to kill anything unless you are going to eat it....and not waste. The rest of the fish was Halibut bait the next day. It's too bad you have to turn this into a "us vs. them" scenario, calling us city slickers. Life is fabulous when you embrace all.
It took me about a year to learn how to fillet this damm thing, from gutting it, to picking all those huge bones out, guiding my knife along the spine.. and i still never worked this fast lol

You generally dont want to eat fish raw unless you are trained chef or bioligist.
I have cu into these fish and have found tapeworms in the meat itself. not the stomach but the meat. Not to mention certain bacteria. My advise is to not eat it raw unless you know if its been processed correctly.

@foxhound1976 many sushi resturants freze the fish for a few days before they serve it, so they kill the parasites. so your right. its not always the best thing to eat raw fish

Such delicious fish here. But so much waste. Steaks are the brst way to use more meat. But i know you have to deal with bones
