  • Aren't you supposed to stir-fry the filling a little bit first and then stuff it in a wrapper?? Since the pork is raw inside a wrapper, chances are the pork will not be entirely cooked when served.

  • oh wow we cook the meat first then we mix and we put eggs with the meat and use the yellow yolk to seal the wrappers..... so which one is better the yellow yolk or the white one hmmmm ?

  • I make these rolls all the time, and they're called egg rolls in the USA. Spring rolls are the lighter versions that uses the clear circular rice sheets and doesn't require any cooking or deep frying at all -- better known as Vietnamese spring rolls.

  • @misterfreshroll . I prefer the taste and texture of Thai spring rolls over Chinese spring rolls. In fact I like almost all other south east asian style spring rolls over chinese spring rolls.

  • Normally I don't like to put carrots or soy sauce in my egg roll recipe but then again this is thai egg roll style so I can understand why they use a lot of carrots in their recipe. I'll have to try this recipe sometime in the future.

    spring rolls are made with a clear wrapper that's not made out of flour, and it's not fried either it's very fresh.

  • I like the alternative recipie to the Lao one I learned! I'd like to point out that though the spring wrappers are delicate you can work with them. when you put the meat on the wrapper fold the end to the middle and push backwards forming the meat into a tube. Then roll twice, fold both ends so the bottom edges align with the edge of your roll and finish rolling. If they come out a little flat looking puff them with your fingers by gently squeezing. I really love this video!

  • I made these spring rolls and they're delicious. The recipe shown in this video yielded at least 36 spring rolls for me! I sprinkled some chili powder and coriander into the filling to give it a little more spice. So good!

    Also, these spring rolls go great with nuoc mam sauce, which is different from the sauce in this video.

  • Spring roll? Why do they call it Spring rolls I don't see what's so spring about it. I remember one time I went to a Vietnamese restaurant and ordered some Spring Rolls and then they came out and gave me Egg Rolls. Not to hate, but it makes more sense to me calling the unfried one spring roll because it has a lot of fresh vegetables nothing is cooked except the meat and wrapping.

  • Fish sauce. They should have it in any town that has a decent population of Thai or Lao. If you don't want to use fish sauce you can use oyster sauce/extract which will actually smell better but gives it a different tase.

    - Roll it 1/3 then put one side in - roll it about one more 1/3 and put in the other side (it's easier :-))

    - if the dough is fresh, you can just use warm water (important for vegetarian rolls)

  • i notice that some call it spring rolls and some call it egg rolls. i call these egg rolls because they are fried and use a different type of wrapping. spring rolls use a clearer wrap and the "spring" tells me its fresh so you do bake it or fry it. In the spring rolls i have meat is cooked already and you put fresh herb and rice noodles in it. This would def make it a healthier choice then the egg rolls. i guess diffrent countries call it different things but both are dam good!!

  • If you bake them they will cook well, but will not be crispy. if you brush a layer of vegetable or sunflower oil on it, it will come out with a similar consistency as if it was fried. It will be crispy too, but not the same as being fried. Even though its already a healthy recipe, baking it will make for an even healthier alternative.

  • my mom baked hers once, and they weren't bad! but i like them fried better. it just depends on personal taste. you should try baking a few just too see if you like it.

  • You can probably fry them with a little bit of oil so they can still get crispy. Instead of deep frying them. =) So it's like sauteeing them. And I think to get them crispy when you bake them, you can brush them with olive oil before baking. That should do it. Sprinkle with your favorite seasonings, and you've got a whole new twist on their flavor! Mmmmmm

  • The skins and the hot oil is enough to cook the meat sufficiently, if they cooked the meat before then I reckon it'd be all dry when re-cooked in the skins.

  • Made these a couple weeks ago. AMAZING! They were exactly like the spring rolls in my favorite Thai restaurant that shut down. I would have died if I never got to eat these again! Found some spring roll wrappers in a local Korean store and they are a must. Question though...does anyone have a recipe to make authentic spring roll wrappers? They didn't have any more when I went back to the store and they don't speak English so I couldn't ask them to order some. I'm deperate! Thanks :)

  • you are right, this food was derived from Vietnam, which was again derived from China in the prior.

    all of them are a little bit different from each other. relax.

  • Actually, Bo Bia Tod was brought to Thailand by Chinese when they migrated to Thailand hundreds of years ago.

    Bo Bia is Spring roll in Teochew, a dialect in the southern part of China, where most of Chinese in Thailand came from.

  • Interesting. She mixes up all the ingredients before wrapping. Every other recipe I saw didn't combine them until they were placed in the wrapper.

  • I find that the wrapper of the brand they are using takes longer to fry for it to become golden brown..I perfer using the other brand of wrapper..I don't know the actual name of it off the top of my head..

    I wonder if her daughter know how to cook?? All I see her do is talk..

    I did have an issue with the pork not cooking completely on my test batch but I realized that I was putting too much filling in each wrapper. When I reduced the filling, they were perfectly cooked when they were golden brown.

  • why don't you cook the ground pork first,  doing the way you do it there is a chance that you can have the pork raw in the middle and maybe have food poisoning,and the also you add soy sauce and fish sauce what is the deal with that, there both salty so pick on not both

  • The Chinese like to make egg rolls by cooking the ingredients first, then rolling them up and deep fry again.

    Thai spring rolls are made with fresh ingredients cooked once...during the deep fry process. If you fry the rolls till they are golden brown, everything should be cooked inside. Never had any problems and

    I personally feel it's much crispier this way.

    ..but if you are concerned , you can precook the pork.

  • Also regarding the fish sauce and soy sauce, you may add both or either one...it's up to you and the taste you prefer. I prefer it to use both

    Fish sauce taste very different from soy sauce, which taste a lot different from plain salt.
