I spread mine about a quarter of a inch for all uses. I feel it is easier on my dehydrator and grinder. I agree that boiling the sweet potatoes gives them a better flavor.
Thanks for all your hard work making the videos. I do my sweet potatoes this way also. I make chips out of these by adding some salt when dehydrating and then breaking into pieces. Warning they are like Lays chips you can't eat just one.
@dsbatts2 You must put them on the tray very thinly. There's no way you could have eaten mine as a chip, probably because they were much too thick. I have to try the chip thing.

Love this idea. I don't have any dehydrated sweet potatoes. Now I know what I need to start the year off with. On the wheat grass, I love that blender too! But people also need to realize that not only will consuming wheat grass provide your body with lots of minerals and vitamins, wheat has every Amino Acid that the body requires for life. So consuming wheat grass is replenishing the amino acids necessary for most all bodily function. Just thought I'd throw that in there. Noreen : )

@MrsOhioAlone It's about a 1:3 ratio. One part sweet potato to 3 parts water...maybe just slightly less. Of course it would also depend on how dry you dry your, humidity, etc. Start out with less water than you think you need and add more as the sweet potato absorbs it.

Can you believe I just found that very same Vortex blender at a Goodwill store for 6.00?!! It doesn't look like it has been used at all. It comes apart and the base stores inside the blender jar. The base is very heavy. I believe it comes with a C-clamp that was missing from the box, so I will get one. I am still in shock because I already knew what they cost, I had seen the West Ladies using one on their canning video. You never know what you will find in a thrift store!

I just roasted some sweet potatoes for dinner tonight, and have a batch in my dehydrator. : ) In regards to your comment as to whether the sweet potatoes will rehydrate in the pieces as well as in the powder...yes. I had tried following BexarPrepper's instructions and I couldn't get my dehydrated potatoes to grind into powder. The best I could do was to get it into small pieces. I tried rehydrating it and it worked fine. I just used my mixer to smooth it once it was rehydrated.

Right now L L Bean has them $69.99 and no shipping. I do a similar thing with my sweet potatoes. I peel them, slice them 1/4" boil them until tender, then put them in my dehydrator, and blend them when dry. 1/4 cup powder sweet potato 1 & 1/8 cup of water. Just a minute later, and as you said, WOW. Happy New Year!!

I don't have a hand cranked blender but I do have a hand crank that fits on my Bosch mixer. I'm not necessarily looking forward to using it; however, it's here when I need it. And it is a good idea to have as many hand cranked gadgets as possible because one never knows what may be coming. Thanks for sharing about the sweet potatoes, I plan on dehydrating some tomorrow and I was going to bake them....guess my plans have changed a bit. :)
Don't forget the treadle (foot-pedal) sewing machine. I found one really cheap on craigslist for $75 and it had a new belt on it and works really well.
