Ah, I know the feeling. I have plans for a documentary-style video series on the wetlands near my house, but its going to take a lot of time/effort to get it as nice as I want it to be.
This is a great inspiration, though. If it is this good unfinished, I can't wait to see the final product! ^^
I capture the video via Final Cut express with a firewire connection from the camera to the computer. Pretty simple, but it is real time, so you have to play the tape. Most newer camera's can capture digitally and you just drag and drop the files no matter the length.

It really sounds good in full stereo uncompressed. I've tried to edit it for widescreen viewing. Would send you a copy if you would like that is uncompressed.

aye , i have same the camera as you but how do you upload clips from miniDV , but my brother owns a panasonic sdr-s26 and it complicated.

scored it myself, using garageband on my mac. Have a full size keyboard that I ran midi into the computer with for the string sounds.
