  • @MyStarify It levels out the sweetness with something salty so that it's not too rich to eat. I'm not sure why Chef John puts such a small amount of salt, but it might be because he put the chipotle powder in there already. :O

    have a look at my video if you want, you can leave the batter in the fridge for up to a week in an airtight container and just bake the ones you want to use right away. the cooking time is very short.

  • I've tried many many chocolate mousse recipes, including this one, and the best one is the simplest: - 100 g dark chocolate, - 3 eggs. That's it, 2 ingredients.

    Mix the yolks with the melted chocolate, turn the whites to snow, mix the whites with the egg-chocolate mixture, put the whole in the fridge for 2-3 hours, you got the best chocolate mousse ever in TWO INGREDIENTS!

  • Chef John, i tried this recipe today and my chocolate and egg mixture was a little lumpy. After that, i folded the cream into my chocolate and it was so dilute. What was wrong? :/

    1. you overheat the choc to without stirring

    2. you overcooked the yolks

    3. the choc mix wasn't cold enough when you add the cream

    4. you over beat the cream or you stopped beating the cream at soft peaks stage.

    he does cook very meticulously and very better than her!!!

    (and he just never talk much as some woman cook and at last found that she just made her lava cake became too hard, no molten chocolate lava , but keeping say that "it's delicious. perfect!". although she couldn't say anything because of shame for almost 1 minute! :( )

  • @XRedDaggerX there are alot of options if you don't like a bit of spice with your chocolate, i would reccomend a bit of mint extract or just ignnore te chili and add some fruit to the finished product.

  • When I whip egg whites or cream I often get droopy peaks. Does that mean I over whipped them? Because when they get droopy and I whip them more it doesn't improve at all.
