Yeah, ketchup is truly bad taste. Even when I was a child and I didn't know any different, I NEVER put ketchup on a dog. It just didn't seem right.

One of my sisters, still puts ketchup on the wieners. As proof of her simple tastes, "gourmet" to her means French Onion dip and potato chips. The only thing she usually cooks is boiled water. I wish I was joking.

I'd say that the two key ingredients, which really can't be substituted and are hard to find, are:

A.) Sport peppers (taste & appearance)

B.) Neon green relish (appearance mostly)

I nearly included the poppy seed hot dog bun. I feel that it is impossible to get fresh.

Sorry, but that is not a true Chicago dog. According to German immigrants who came to Chicago in the late 1800's, a Chicago style hot dog is a natural case beef hot dog, boiled and served on a bun with mustard, sweet relish and onions. No tomato slices, no pickle spear, no celery salt and of course NO KETCHUP. That's not a hot dog, looks more like a freakin' salad on a bun.
