@kinjur eastern white oak is the best. but many other white species of oaks are good. red / black oaks have alot more acid and tannins and generally dont taste as good, they also take alot longer to leach out through boiling or soaking.
In the wilderness of Arizona, I found a large dead tree with partially detached bark. In the space between bark and tree, hundreds of acorns had fallen and none of the animals found them (there's a lot of competition for them in the wild). They had been there so long that they were naturally leached. They were perfect. Ate every last one. Yum!
I'm leaching the tannins out of my shelled acorns by placing them in a mesh bag and dropping them in the toilet tank for a week. The water gets changed every time we flush.

I hope you threw away the acorns that had little holes in them.. weevil's...
Don't you know.. When surviving you must choose the lesser of two weevils... Bhahahaa.. anyway yeah.. avoid the little holes.
