I do this in the oven like a turkey and I use fish/salmon seasoning because it has more flavor than meat seasoning.

Also rub the bird with a hand full of butter instead of oil. Better flavor and crispy skin.

Try using a pearing knife to make small incisions down the breast and pushing raisens and nuts into the holes. Adding liquid smoke to the beer before cooking is good too.
