    Actually coconut oil is a poly-saturated oil which is hard for your body to digest, and not in a good way. Try peanut oil or a thinner oil. I personally love eggplant with a little oil brushed on top and grilled. That in a vegie based wrap is one serious mouthgasm.

  • @Laurengovern Coconut oil is INCREDIBLY healthy, it's the vegetable oil that is toxic. GMO canola, and the way it's PROCESSED with such high heat creates trans fats - which is the killer (literally). I would suggest to do your research on the two and see what the truth is. Any type of industrial agricultural oil is very toxic.

    Also, what's up with peeling off the nutritious skin??? This video is not at all promoting health. Buy organic and keep the skin.

  • At the very least use olive oil or maybe try organic coconut oil. Also it doesn't need to swim in the oil.I got an upset stomach watching that oil frying.

  • Slice, lightly season, bake & serve. Guess that would have made the video less interesting but the eggplant would have been healthier.

  • Less is better, No need to peel the peeling off. The purple peeling is good. No need for tongs use a fork, no need for a colander, use a paper plate (one less dish to wash), no need to put a weight on it for an hour, lol, thats funny. Cut it thin. No need to dry it...lol. Get a fork, a thin cheap steak knife, flour salt and pepper. Cut that booger as thin as you can slice it. I have found a small cheap steak knife does way better than a paring knife. Drain excess grease on paper towel.

  • Hi idiots. This is not necessary unhealthy.

    If a healthy oil such as grape seed or canola is used, then it is fine. Vegetable oil I'm guessing not because it may be genetically altered. Either way the fat in it is healthy.

    Salt is not bad for you. If you are exercising, salt may need to be replaced. Only when vast amounts are consumed in one sitting, such as fast food, then it is an overdose. A sprinkle on eggplant is fine.

  • I've actually freid eggplants with the skin on and had it breaded. It doesn't taste half bad; definitely better than raw or steamed eggplant.

  • a very simple way to cook it is:

    step one: cut the eggplants to half

    step two: steam the eggplants

    step three: one the eggplant is soft and ready to eat, put a little bit of soy sauces on it.

    step four: eat and enjoy

    =), simple and healty1

  • @TehMightyLlama Wrong. Americans are fat because they eat too many overly dense foods, loaded with salt, sugar and fat. This about the worst way to eat an eggplant. It's the preparer's fault, not the eggplant. It's fine if you bake it.
