Can I can raw butter...as in put in in air-tight mason jars? I use stove (boiling water) canning for pasteurized milk un-salted butter...but I have to melt it down on the stove to pour it in the jars, would melting it pasteurize the raw milk or will it be melted before it gets hot enough? Would it last longer if made from raw milk or would it last not as long? Thanks!!

@DaughterAndHeir As long as your food processor is powerful enough, you can do this with as much heavy cream as it can handle. We have a video where we use a Waring food processor with a whipping disc that makes about a quart of heavy cream into butter in about a minute.

I am getting my raw milk directly from a certified organic dairy farm BUT they sell only raw milk, not cream. Is there any easy/handy way how to separate cream from milk? I know that cream floats on the surface but I have difficulty to skim it efficiently.
i made butter in a mason jar a few times. it takes 5 minutes tops and its not that difficult. let cream sit out at room temp for 12-16 hours and shake it in a mason jar methodically, about one shake a second. when the liquid no longer sticks to the sides of the jar, drain, rinse, and voila! homemade butter.

Let me tell you that first glass of high fat content raw goodness was like liquid ice cream! And It turns out that one of the only distributors (with whole foods out of the picture) is blocks away from my work!

If I could only get this Raw Milk and Cream in Winnipeg Canada, I'd be very very happy - and I could make my own healthy butter, etc.
The government has placed restrictions on the farmers here.
The Farmers feed us all and they deserve the unrestricted Freedom to do that properly and uninhibited.

@dromycatcher You don't make cream from milk. When you let the milk stand, the cream rises to the top separating from the milk.
