  • assuming i could afford the ventilation system to have a high powered wok burner indoors at home does the kitchen need to be a minimum size for safety? im interested in having a high powered wok burner ventialtion system installed at home the same as what the restaraunts use but im affraid the do gooder rules will prevent this due to it being a domestic house. as long as you have the forced air ventilation system it would be perfectly safe

  • @stevenmix00 In Chinese cooking one doesn't use fish sauce, that's mostly for Thai, Laoatiion and Philippino cuisine and the chef is Philippino because I can hear him speaking it. So, these are not authentic recipes but the chefs own twist on it or probably the way they make it in the Philipines.

  • It's a test for a chef. The cooking must be done over a high flame and the stirring must be done quickly. Not only must the ho fun be stirred quickly, it must not be handled too strongly or it will break into pieces. The amount of oil also needs to be controlled very well, or the extra oil or dry texture will ruin the flavor. Because of these factors, this dish is a major test for chefs in Cantonese cooking.

  • Brilliant !! a joy to watch and all respect! I cook a lot of Asian foods but to see it done on this scale with this amount of confidence is truly brill. Unfortunately here in the UK most of the takeaways serve up pre cooked on mass bought in dishes that are just re heated and sold on with their own little twist, it really is so obvious , when you buy say a beef chow mein it is exactly the same wherever it is bought in the U.K. Just that the cooks give it their own little touch.
