Why, because they have not made any effort to redesign. It is no disrespect to the designer, as it is not their fault. What they have done is just recreated the movie designs for the stage. Especially Fiona's and Donkey's both of which look tacky and Halloween-esque, since I admire the work done on Shrek's makeup. The charm of the movie does not translate well to real-life.
