  • Guys guys guys. The title isn't wrong, those salmon being in the sink did cook it through. All he did was heat it through and give it flavor on the pan. Shut the fuck up and grow a brain. This is the Sous Vide method of cooking.

    Thats because he did. He finished it off in the frying pan for about 10-15 seconds. Just listen to the instructions before going off about fakeness. Sous-vide is not a "fake" thing.

    If you didn't used tap water, and cooked it properly, you wouldn't have to dip it in olive oil, and then fry it in butter just to get some flavour into it.

  • @chadley6916 Cause you cant fuck it up when you poach it in the sink, you cant over cook it, tear it or fuck it up. Then you just Sautee it lightly in the pan to caramelize it a bit and add some overall flavor.

  • I thought the idea was to cook it in the sink and avoid the pan. I could just cook it in the pan since I'm going to "heat it through" there with nuts. Is there a texture difference by "cooking" it in the sink?

    Yes there's a big difference in texture. Sous-vide cooking is used to achieve an uniform temperature throughout the fish by setting a waterbath at the desired doneness. However, browning (maillard reaction) is achieved at higher temperatures, which is why it is quickly seared. Traditional cooking aims to do the same by using higher heat. The problem is that by the time you achieve the desired internal temperature, there will be a large gradient of overcooked fish on the outside.

  • @magical11 if you cook salmon 20 seconds in the pan, there will be so much white albumin coming out of your salmon and also it will be undercooked as hell. reason for cooking 15 minutes sous vide is making the fish perfect and evenly cooked throughout. also the reason why he put the why he put salmon on the pan is to make the concentration of flavor on the outside of salmon, and adding more flavor from the spices. if you have no fucking idea about cooking do not comment shit, fucktard
