Guys guys guys. The title isn't wrong, those salmon being in the sink did cook it through. All he did was heat it through and give it flavor on the pan. Shut the fuck up and grow a brain. This is the Sous Vide method of cooking.
I was just wondering if sousvide'ing something in hot tapwater is enough to change anything at all- there wont be much change in the structure of the proteins and it seems this is more sushi than cooked.
He used a pan to make it taste good. You can still eat it after you take it out of the sink though, it will just taste better with the spices and everything.
the salmon looked insulted at the end. salmon: "dude, I understand the warm bath and all, but why put a flower on me at the end ..just eat me and get it over with"
Thats because he did. He finished it off in the frying pan for about 10-15 seconds. Just listen to the instructions before going off about fakeness. Sous-vide is not a "fake" thing.
Yes, it's called poached salmon...cooking in low heat.
If you didn't used tap water, and cooked it properly, you wouldn't have to dip it in olive oil, and then fry it in butter just to get some flavour into it.
@chadley6916 Cause you cant fuck it up when you poach it in the sink, you cant over cook it, tear it or fuck it up. Then you just Sautee it lightly in the pan to caramelize it a bit and add some overall flavor.
I thought the idea was to cook it in the sink and avoid the pan. I could just cook it in the pan since I'm going to "heat it through" there with nuts. Is there a texture difference by "cooking" it in the sink?
Yes there's a big difference in texture. Sous-vide cooking is used to achieve an uniform temperature throughout the fish by setting a waterbath at the desired doneness. However, browning (maillard reaction) is achieved at higher temperatures, which is why it is quickly seared. Traditional cooking aims to do the same by using higher heat. The problem is that by the time you achieve the desired internal temperature, there will be a large gradient of overcooked fish on the outside.
@magical11 if you cook salmon 20 seconds in the pan, there will be so much white albumin coming out of your salmon and also it will be undercooked as hell. reason for cooking 15 minutes sous vide is making the fish perfect and evenly cooked throughout. also the reason why he put the why he put salmon on the pan is to make the concentration of flavor on the outside of salmon, and adding more flavor from the spices. if you have no fucking idea about cooking do not comment shit, fucktard
@Cerrani91 why should he have? it is basic technique to saute a protein after cooking a piece of protein to concentrate flavor outside of it. i'm no trolling i'm stating facts. you on the other hand, a fat greasy fucktard sitting on your basement coutch who has absolutely noooooo clue about cooking at all. this guy co-authored one of the greatest cookbook in 21st century and he is one of the most famous chef in the world what the fuck have you done besides jerking off?
@kdg5636 ah, Internet-Fighter it is then. I'm actually studying to become a chef, and yes, I know what Sous Vide-cooking is. Unless you got other things to tell em about than how im AGAIN just a greasy nerd, think about something else for a change. Its getting old.
@Cerrani91 you are seriously learning to become a chef and you know what sous vide cooking is and you're saying the title should be how to cook salmon in your sink and your pan? wow... i think i'm done...
@kdg5636 The thing is, most of the people who come on this video, expect only using sink in this method. Its true and you know it. Thats why I think it should be mentioned in the title.
