Pai's style is called Ensei-ken, which is what I believe Pai wants to learn. Why isn't there Pencak Silat, ring size customization, and a create-your-own character in VF?
I don't know about kou ken (phenix style?) but kouen ken is Pai's father, Lau's style. According to the VF story, Pai always hated her father but when she learned that he had an incurable disease and was nearly murdered she trained hard for her father to recognize her as a true martial artist. So far Lau considered Pai as unworthy of learning his Koen Ken (= ensei ken merged with tora ken). So I guess Pai rather wants to learn Koen ken as she was only allowed to learn ensei ken until now.

Eileen-->Grand father
Pai-->Father (Lau)
But actually, Eileen entered the competition because she admired Pai. So it was basically to meat Pai and also to test her abilities in passing...

Probably because they can't copy Namco's idea (Soul Calibur).
