Hamilton Beach makes one with a temp probe but it merely turns off when the temp is reached, Sous vide needs maintaining a constant temp, fluctuating only a few degrees. Steak, for example, should be cooked at 135F. American slow cookers don't go that low for fear of food poisoning.
The extension cord he used isn't rated for this kind of load. Go money crazy and drop another $1.50 on a proper cord.

What load? Slow cookers use very little current, about 60-90 watts on low and 150-210 watts on high. Most cheap ones, like my $14 model, are 60/150 watts. On low, the cooker uses less electricity than a 75 watt reading lamp. This cooker is no different than an incandescent bulb, both being resistive loads. Are you seriously saying that there exists an extension cord that can't handle 60 watts or even 150 watts?

As proof, get a vaporizer, which is just two electrodes submerged in water. Plugging it in usually does nothing unless your water has a lot of mineralls. You normally have to add a conductive electrolyte like salt before steam is produced.

Once it reaches 130F, it turns the outlet off, turning off the heat. The water then stays around 135F constantly.
Basically, this is like an electric heater or toaster oven. You set the thermostat for a certain temperature and it cycles on and off to maintain that temperature. When it's too cold, the heater/oven turns on, and when the desired temperature is reached, it turns off. Sous vide cooking needs very precise temperatures, which is why you need a digital controller and not just a dial. Cooking lasts many hours, and even days.
