@Fumikochan1: Every month or so after first getting Nookington's, Nook will ask you what you value most in a store. Depending on what you say, he may remodel the store back to Nookway or Nook 'n' Go. So someone (either you or someone else who plays your game) must have told him you wanted "good hours." In another month, he'll ask again. Just choose "variety" to get Nookington's back.
