  • I am having trouble doing the crumb coat because my cakes are VERY VERY VERY crumbly and tend to have LOTS and LOTS of crumbs, any tips on how to bake a cake so its not so crumbly would be greatly appreciated.

  • @jameelahafiz200 I think I do need to make a baking video. I picture it as a little boring, though, because it's a lot of talking, not too much doing. Maybe I'll blog in the meantime! Butter can be drying to a cake - substitute some or all with oil, some of it being Olive Oil. You can also add mayonnaise (1/4 cup) or an egg yolk or 2. Also make sure your sugar ratio is about 1 1/3 cup sugar for every 1 1/2 cup of flour. DON'T over bake, and don't over mix!!! Just some basics; more later!

  • @ConcreteRoseKei Sure you can use store bought buttercream but it can tend to be a little soft leading to a droopy looking cake. The CK brand is a nice sturdy American Buttercream. If you really want to wow your guests/clients, try the Swiss Meringue Buttercream recipe on our Bulliten Board on our website.

  • i am having a real problem with putting the cake in the fridge after the crumb coating which i have to do as i want to put the fondant on.

    any recipes that wont harden the cake after refrigeration? i have very little time i am suppose to be making a doll cake in one week

  • do i freeze the cake after the crumb coat?

  • @mssweetlouise You don't need to freeze the cake, but you can if you like. I usually pop it in the refrigerator for a short time just to firm up a bit.

  • I've been doing cakes for 25 years. You remind me so much of myself!! I too was strong willed and bossy as a kid!! My husband would be quick to say, "Still are!!" Even though I've done cakes for years, I've learned something from every one of your videos. I love to watch them! You explain everything! Awesome job!!   • The recipe I like is the Vanilla Cake recipe that comes from Elis Strauss' "Confetti Cakes" book. Good flavor, durable, yummy.
