The gracies have a tradition to prefer to submit people whyle on the ground, rather than KO them. Not all Gracies feel or fight that way. Rickson I think takes strikes as a distraction/path to get a submission.
if you mean some of the motions like around 0:45 where he places his arm out to the right (not a punch!), that is really just for stability. remember that at any moment the opponent may try to escape from the flattened position
There is some history with this family. It was Rickson Gracie vs. Kimura.
A previous Kimura broke Helio Gracie's shoulder using a keylock that the Gracie's named the Kimura, after Kimura. The Gracies have a great deal of respect for that family, so the last thing that Rickson wanted was to harm the young Kimura (who eventually went to train with the Gracies).
In fact, many of the people that lost to Gracies were invited to train with them and many excepted.
