if you're interested, I have a cream cheese recipe that is perfect for cinnamon buns that you won't have to do much spreading. It was actually supposed to be cream cheese frosting, but it was way too thin.

My grandma said to always add a teaspoon of sugar when dissolving yeast, in order to activate the bacteria. This has never failed me. (I hear vinegar can be used for similar results, but I've never tried.) Also, fresh yeast over dry yeast is preferable.

Hi, I follow your videos and admire your work. I have a question, though about that tendonitis... are you completely sure it isn't maybe carpal tunel? The thinsg you mention just sound so similar to the symptoms of carpal tunnel syndrome.
@Shantewa Agree, I have the exact same thing, it really is carpal tunnel syndrome in my case. And...my doctor says it's probably because of baking cakes!
@Shantewa They are pretty similar but this is definitely tendinitis, the pain is in a different area. lol, I did my research then went to a doctor last year and she confirmed it.

other that this, we have superstition, that ladies, on 'those' days of the month, shouldn't work with yeast, because the enzymes secreted by the palm, kill the yeast... that's if you believe in superstitions :)

tricks of the trade: yeast cake!!!!! Its fresh active yeast. You can get small amounts of it. Works so much better. Plus, to hurry up the yeast, add a little bit of the sugar in the recipe to the yeast and liquid mixture and let it set for 15 minutes. Sugar will feed the yeast and produce lots of carbon dioxide=gas. For rolling the dough out, cut the dough in half and work with half of it while rolling out and filling the dough. Its a lot easier to work a with a little roll than the big one.

Keep the baking adventures coming! I love how you use the wood as a surface. What kind of wood is it? Is it polished/stained? where did you get it from? My kitchen is tiny so I think I'm going to try it out.....I wonder if it would work for fondant too...hmmm.
Do you follow the recipe exactly for the yeast part? For most recipes I've made you mix the yeast and hot liquid together and let it sit for a few minutes and then wait until there are bubbles, which means that it's been "activated". Are you supposed to add eggs right into the yeast mixture or add it to the batter afterwards? How old is your yeast? Just trying to think of some factors that might influence your rising problem. =)

My husband is been bugging me to make cinnamon rolls, so finally last weekend we made some from Paula Deen's recipe - they were so good but I have no idea how fattening those must have been since it called for a ton of butter LOL... I am going to try your recipe soon. Do you ever make yours the night before and refrigerate the rolls overnight and bake in the morning? If so, have you had good results?
whenever i bake with yeast, i always warm up the liquid in the microwave for a bit and then test in on my wrist to see if it's too hot. it's the right temperature when you don't feel it. i've always done my mixing by hand, so i wonder if you might have over beaten it. i dunno, i always try being very gentle to the dough when there's yeast in it.

@chicainger I do know people who have it and I also used to have a small case of it before I had kids. I am certainly not trying to downplay anyone who has it and I apologize for any offense, this was not intended. I make light of how I act in my videos, and hopefully others who have OCD tendencies won't feel so bad if they see someone else being the same way.

In Norway we melt the butter and pour in cold milk. Then you can take a teaspoon and check if the mixture is the right temperature by putting some on the wrist. If you can't feel it it's the right temperature. Add the yeast and some sugar. This is something that always has worked wonderfully for me, we learned it at school last year. And trust me, when a gang of 14 year olds can do it, i bet you can.
What do you normally do when you use yeast? I would love to see if I can help you make it work, we shere told everythign there is to know about yeast at my baking school.

yummo! as for the yeast problem, make sure the milk isn't too hot (that will kill the yeast) and maybe let it sit for a while before adding the eggs...if your yeast is active, it should start making little bubbles in the milk within a few minutes. then add the eggs...just a thought...
yeast hates me too, so so much. watching this was torture (low carb diet) i just want to rush out buy 10 of these and eat everyone of them (i must restrain myself) thank you so much for your videos, i love them all, they really do give me inspiration!!!
@krissytehpink Don't restrain yourself too much, that's not fair to you! I'm sure if you were to make these, you could cut the finished dough recipe into 2 or 3 pieces, and make tiny rolls that only go an inch or so across (when placed on the pan), freeze them, and just bake them one or two at a time if you need a little treat :)
yeast needs times to wake up i use alton browns method
the is 1/4 c warm water or milk and 2 tbsp of sugar and add the yeast to it....wait 30 mins and u'll go WHOA! whats that thing?! but this really helps the dough rise
@slsrox1298 if you are making regular cinnamon bun glaze, just use milk in place of the oj. :)

tip for heating your milk is to use a candy thermometer. That way you can use it while heating the milk instead of guessing if its hot enough.

I always have to let doughs rise a lot longer than the recipe says. Sometimes even let them rise extra times. For extra fluffy results :D.

yeast actually dies at 110 degrees, you have to have the temperature lower then that. if its too warm then they wont do much

is the dough for this recipe moist? cuz i wanted to make cinnamon buns for a while but im afraid it will have a dry dough like the buns i get from the grocery store. :( PLEASE HELP OH WISE AND AWESOME ONE!!!!

I really wish people would just lighten up a little. There is so much stuff in this world to fuss about, can't you just come and enjoy a nice, helpful, instructive video without complaint. I think you do a wonderful job and your sense of humor adds to the experience. Thanks for sharing! BTW I love all you baking exploits (but caking is my favorite). Keep 'em coming!!

Keep the baking adventures coming! I love how you use the wood as a surface. What kind of wood is it? Is it polished/stained? where did you get it from? My kitchen is tiny so I think I'm going to try it out.....I wonder if it would work for fondant too...hmmm.

Do you follow the recipe exactly for the yeast part? For most recipes I've made you mix the yeast and hot liquid together and let it sit for a few minutes and then wait until there are bubbles, which means that it's been "activated". Are you supposed to add eggs right into the yeast mixture or add it to the batter afterwards? How old is your yeast? Just trying to think of some factors that might influence your rising problem. =)

thanks for the video! The cinnamon buns look so delicious! My husband is been bugging me to make cinnamon rolls, so finally last weekend we made some from Paula Deen's recipe - they were so good but I have no idea how fattening those must have been since it called for a ton of butter LOL... I am going to try your recipe soon. Do you ever make yours the night before and refrigerate the rolls overnight and bake in the morning? If so, have you had good results?

whenever i bake with yeast, i always warm up the liquid in the microwave for a bit and then test in on my wrist to see if it's too hot. it's the right temperature when you don't feel it. i've always done my mixing by hand, so i wonder if you might have over beaten it. i dunno, i always try being very gentle to the dough when there's yeast in it.

You know OCD isn't at all funny to people that actually have it or their families, and if people like you try to be funny by claiming to have OCD every time you're anal about something it perpetuates stereotypes and makes sufferers of OCD be taken less seriously. If you really have OCD now i apologize, but if you just like things neat then do please try and reconsider how you say that. I'm sorry if this sounded harsh.

@chicainger I do know people who have it and I also used to have a small case of it before I had kids. I am certainly not trying to downplay anyone who has it and I apologize for any offense, this was not intended. I make light of how I act in my videos, and hopefully others who have OCD tendencies won't feel so bad if they see someone else being the same way.

I have a family member with OCD and in no way did I, or have I taken offense when you have said anything about OCD.. I know what you mean about a clean kitchen and having things perfect and even. Everything I do has to be in an even number, that gets frustrating sometimes! lol So there is no reason to explain yourself because of one comment.. no one else thinks that. =) I hope you have a GREAT weekend

In Norway we melt the butter and pour in cold milk. Then you can take a teaspoon and check if the mixture is the right temperature by putting some on the wrist. If you can't feel it it's the right temperature. Add the yeast and some sugar. This is something that always has worked wonderfully for me, we learned it at school last year. And trust me, when a gang of 14 year olds can do it, i bet you can.

yummo! as for the yeast problem, make sure the milk isn't too hot (that will kill the yeast) and maybe let it sit for a while before adding the eggs...if your yeast is active, it should start making little bubbles in the milk within a few minutes. then add the eggs...just a thought...

yeast hates me too, so so much. watching this was torture (low carb diet) i just want to rush out buy 10 of these and eat everyone of them (i must restrain myself) thank you so much for your videos, i love them all, they really do give me inspiration!!!

@krissytehpink Don't restrain yourself too much, that's not fair to you! I'm sure if you were to make these, you could cut the finished dough recipe into 2 or 3 pieces, and make tiny rolls that only go an inch or so across (when placed on the pan), freeze them, and just bake them one or two at a time if you need a little treat :)

yeast needs times to wake up i use alton browns method
the is 1/4 c warm water or milk and 2 tbsp of sugar and add the yeast to it....wait 30 mins and u'll go WHOA! whats that thing?! but this really helps the dough rise
