you heat potassium chlorate, so the oxygen (the -ate bit) is removed from the compound, to leave potassium chloride. its illegal to put any acids near it. you have to use a jelly baby, cos it has a small surface area, whereas if you used something like sugar (with a larger surface area) it would...well...explode!
