I guess there were a lot of good scenes that they had to delete, like Captain Smith telling people in the life boats to come back to the ship for more people, and the written messages of the iceberg warnings being ignored. I'm sure they were good scenes, but the movie was so long already.
i agree that this scene should have been deleted, because it is a little cheesy and also for the movie's length, but it really did connect back to so many other things throughout the movie! At the beginning of the film, she's doing pottery and they also mention that in her younger years she was an actress. Also, the fact that she hates caviar connects back to why jack during the dinner scene says "no caviar for me thanks, never did like it much" and makes eye contact with rose, who smiles :)

Then jack beat's him up. But not completely. It's another proof to show what a good man jack is. Because you se Cal's guard at the boat when it starting to break's, with blood covered face and you think ''Why?''.. So why did they delete that scene?

@MrZygoticmynci James Cameron also said there wouldn't be a 3D new verision of titanic at first. Because the causes could have been, senseless scenes, not the same emotions like the first one from 1997.
There's an interview which i can't find atm. But, he said that titanic will be released in 3D atlast. And they will work alot on keeping the original movie emotional fit to this new verision as possible. He also said: ''There will be scenes you haven't seen from the first one also''
