it's ok. Bamboo shoot is just delicacy in most of asia. Make sure to boil it in salted water before cooking it, otherwise it will be smelly.

raw bamboo has cyanide... better cook it to leach out the toxin! i'm still waiting for my "betong" (an edible variety of bamboo) to reach maturity so that we can harvest it.....
