This is avoidance conditioning (also called avoidance learning). Specifically, passive avoidance conditioning as the subject has learned to avoid the aversive stimulus (being smacked in the face by a pillow!) by not responding to neutral stimulus (the knock on the door).
I believe this is actually operant conditioning as it displays avoidance learning, ie your participant has learned that if he does not open the door then he will not get hit with a pillow. He also has a pillow himself in one of the frames so surely he has also learned action association?? This is a better example of operant conditioning rather than classical conditioning!!
