All lifters lift with the same speed time-wise from the floor to catching the weight. It is when the acceleration points are missed they lose control or balance. The jumping is caused by pulling straight to the knees and then inward toward the body. The s-curve has to be released more during the pull from the knees to full extension, and they have to jump back to where they pulled the weight.
Jumping back wards is a result of good triple extension and correct second pulling. Jumping forward in the snatch and clean decreases the velocity of the trajectory of the bar. It also makes it easier to absorb the impact of the weight during the eccentric portion of the lift.
you jump backward becausa you throw your angle of your back to far away from the scond pull spot, so you continue your second pull by putting the bar on the dead lift spot(also called the deadspot) and lean backwards 4-5 grades when ypu need to pull in 2-3 grades backwards so that the weight and the bar do not take control of your body with the weight from there its just legs and strnght to support the bar under you head

it's still valid lifts all that matters imo it's the huge amount of power these athletes have the weight jerks backward

I don't exactly know why, but I do tend to see smaller athletes jump backward and tall athletes (especially the long arms ones) jump forward.

they jump backward because of the fact that they are pulling the bar onto themselves instead of puling themselves under the bar
