I think what you do is knock him down once without being hit then Star Punch him.

No. Use seven punches on the infinite loop in phase 1 (7th punch MUST knock him down), then any star will kill him.

I got a little tip that may work for you to remove the flicker from that video.

When i was looking for desktop recording software, i stumbled upon supercam, which has the ability (if your camera is plugged into the computer) to remove the flicker in its settings.

ive yet to find a good desktop recording device :( but at least i can be of service to someone else.

just google the aformentioned software and you will find it

Thanks for posting this video.

This particular trick on Don Flamenco where you're punching him left and right like that does not work using the Wii-nunchuk controller (I know this, because I tried it and it is way too difficult). You have to use the regular controller to defeat Don Flamenco. Sorry, but that's how the designers made the game. :-(

Sorry, I meant to say Wiimote-nunchuck controller...this trick requires holding the Wiimote sideways and using the controllers that way.

I think thats the same as in MTPO. If you took him down the first time with alternating nonstop punches, the next knockdown was a sure KO or something like that.
