i really want to try jajangmyun , but i cant use wine(cause its against my religion) , so is there anything that i can use it instead of wine ? , oh , can i use beef instead of pork ?
i cant get rid of the bitter taste...i put much sugar in it but the taste was sweet and bitter at the same time.....i wonder if my black bean paste is bad ?
usually.. black bean paste has bitter taste... it shouldn't be too bad though after you frying it .. did you use Korean brand ?? because I didn't try other country brand..
@aeriskitchen hmm i cant remember but i think it was chinese....how long can i keep it in the fridge after its open ? i try another brand and make sure its korean :)
I didn't try a Chinese black bean paste.. maybe that's why it was too bitter.. maybe not.. anyway.. you can keep it for a long time (more than a year).. unless it gets mold..
I wonder if you fry it long enough.. at first.. it will be very thick and hard to stir..but with oil.. if you keep stirring while it's frying.. it will be smooth..
so I followed this recipe and made jja jang myun tonight, but i found that there is a slightly sour taste to jja jang... what did I do wrong? I used all the ingredients you used.
taste is kinda off... like 'slightly sour' that i don't remember from when i ihad it korea growing up...
It can be the brand you used for black bean paste.. each brand seem have different flavor..and homemade jajang myun is different from restaurant one.. for several reasons.. first.. they fry ingredients in real high temperature in wok.. second.. they use pork fat to fry the ingredients.. third they add msg in it.. with these reasons.. restaurant ones taste better.. Try other brand of black bean paste next time and see if it makes any difference. ^^
i've tried ur jjajangmyun recipe..it was sooooooooooooooooooo good!!
but i mixed it with both rice and my leftover spaghetti pasta....i put lil' bit indonesian red pepper sauce when i ate it with spaghetti pasta and the taste was brilliant!!i think i wanna make it again next time, hehe :D

There is noodles for jajang myun or udong.. (not japanese udong)... both fresh noodles in a refrigerator section.. or frozen section.. or dried noodles ... the package will say that. Please visit my blog aeriskitchen com and research "thick noodle" then.. you can see the picture. thanks
sorry , but i was just wondering, wont it be very salty since so much of the black bean paste is used? or is it a different type of black bean paste? like a less salty type?
I never tried the Jja-jang mee in Korea but my mom ever went to seoul on Jan and she fall in love wit the noodles, so the cooking u show here is the same they serve in the restaurant in Korea? and is it suppose to be spicy or non- spicy? lastly, the noodles is it refer to ramen or any type of noodle u can recommend?
well.. homemade one and restaurant one are a little different... but similar.. for this dish..I think.. restaurant one tastes better..but I still like homemade version too.. yep..it's non spicy... thick noodles work for this..thanks
hi, i have try ur korean tofu soup recipe tat goes with rice n tested on my korean colleague and they said is good, thanks :). i have watched the cooking on Jja-jang bob and got a few query. Firstly, it's totally different from the chinese style cooking especially they uses minced meat rather than small cube size meat and the vegetable too , so is it possible that minced meat is used?
Yeah. When I went to an authentic Chinese restaurant, I was expecting real ja jang meog. But Korean styled ja jang meog was served. I was surprised at that time. I don't dislike Korean one, but I wanted to taste a spicy noodle at that time.
I wondered what the original chinese black bean noodles are.. I know.. some chinese who lived in Korea.. brought some kinds of.. korean version of Chinese food in Korea.. ^^ anyway.. I hope I can try authentic Chinese food someday.. thanks
if i'm not wrong i noticed that the beef is fried with no oil. normally my "non-stick" pan will still get the meat stick onto the pan. what is the brand model of the pan u're using?
usually.. for this recipe.. people use pork instead of beef.. for my husband I use beef... the pork will give you oil to cook.. anyway.. the pan brand is.. "WearEver" ^^
Hello there mate, thanks a lot for the video. My lads and I've been dying to get some real information on how to make this food! Naver has never been that helpful with this food. Anyways it tasted great, we all loved it and most importnatly we felt like home for a short while! Thanks mate.
Oh..I'm sorry to hear that it was too salty. What I can think is... maybe you eat food not salty...the black bean paste is salty ingredients... since you mix it with water and other vegetables..it becomes less salty later..and you eat it with noodles or rice.. so it helps... another thing I can think is... what kind of black bean paste you used.. didn't try other country black bean paste...but I can picture the flavor or saltness can be different.,did you use Korean one or Chinese?
HI AERIS!!! a question, you must know that im alergic to any kind of pumpkin, so i was curious about if this recipe is totally necesary to add pumpkin or zuccini that finally is the same on it? and by the way the black bean paste is like the peper paste? there is not a way to do it in home...? thank aeris for your time.. a hug
Oh~~ you have alergic to pumpkin..and zucchini... yes.. you can skip.. I will say..just increase the amount of other vegetables a little instead.. like potato..onion..black bean paste is a special paste for this black bean noodle dish.. we buy it from store.. don't make it at home. thanks :) big hug ~~
omg looks deliciiious! i've only ate the store bought ones for bap.. those that you just gotta either microwave or boil for about 3 minutes or so.. lol doesn't taste so good.. I should try this ;) thanks!
wah~ i ate jajangmyun for the first time last week and i LOVED it! so i went to the Korean market and got some black bean paste and noodles!! i'll try this recipe!! thank youu
If you don't have corn starch... add really tiny amount of water (few table spoons) and skip corn starch.. we call it "gan jja jang" in Korea... and cook sometime before you serve it. thanks !!! it will be saltier ...so think of the amount when you serve..
ohh nice I am indian too... heheh love korean food so deliocous!!! hahahah the potatoe wasnt corperating with the cutting hehe just noticed khamasamida!!! dommu mashiseyou hopefully I am saying it right lol ^^
You are saying right. It's always great to hear Korean sentences from different country people.. :D Hahahaha.. good catch.. Yep, the potato didn't cooperate well.. the potato starch..@,@ hehe Thanks for fun comment !! My husband and I like Indian food. Nice to meet you!!
Oh~~ That's cool you will move to Korea soon. Do you eat seafood ?? You don't have to worry about it.. There are many vegetable side-dishes in Korea. Just you might have to be careful about seafood if you don't eat seafood. Since we eat lots of seafood. Good thing is.. we also eat lo~~~ts of fish dishes. If you have any questions about Korea..please let me know. I hope you will have awesome time in Korea.
This the best cookery show that I have seen in my life. Very clear n concise instructions, no unnecessary dialogues by the cook. Downright business from the word go. I will try out this dish for sure. Thanks againand keep posting these wonderful cuisines from Korea. I am from India. Greetings from India.
Namaste !! (Did I say right ?? hehe.. i hope i did..)
I'm very happy to meet you !! I have some Indian friends, and I have very good image about Indian people. I and my husband like Indian food. thank you again.. hope to see you often. !!
i brought the cha jiang paste, it is so sticky while i fry it.. your 4tbsp looks alot to me like 2 tbsp. now i put it in freezer cause wont use frequently n the paper seal when i remove it the plastic cover isnt tight, can you add more jia chang recipe so i can use up quickly lol
oh..did you try the recipe ???? put it in freezer ?? not in the refrigerator ??? I think you can keep it in the refrigerator quiet a long time... Yes, I will think of more recipe for that.. we use it mainly for jajangmyun in Korea.. thanks !!!
oh.. I like to read comments. I have to tell you thanks !!! haha.. your father is very good !! Your mom will appreciate on him. My husband is good at eating left over.. I like that :D Happy new year !!!
^^ In any Korean store or asian store, you can find thick noodles for jajang myun (black bean paste noodles) or udong noodles. They sell both dried noodles or noodles in the freezer or refrigerator section. thanks !!
Yep..you are right..the cooking wine is for meat..to make the meat tender and remove the bad meat flavor..hehe If you don't have it, you can skip it.. it will not ruin your food. wow.. you are going to make it soon? assa !!! Please enjoy !! thanks :D
hi aeri :) i'm watching this video again so i can listen to the song...my boss comes walking in and says, "whats that chopping sound?" teehee :) i thought it was funny
Yes.. I added all of the corn starch water in the pan. It looks a little too much water.right??..but later it becomes thick..so that's the right amount. :D thanks for question !!!
haha... maybe you were not accustomed to that flavor then. My husband also liked it more and more after he eats it several times. I've never used chinese or other country black bean paste.. so if you used it, I can't tell the difference for the flavor..maybe it will be similar..maybe not..anyway..thank you for telling me the result ^^

zsiyi 2 years ago
Hi, zsiyi
If you don't have corn starch... add really tiny amount of water (few table spoons) and skip corn starch.. we call it "gan jja jang" in Korea... and cook sometime before you serve it. thanks !!! it will be saltier ...so think of the amount when you serve..

Hi, zsiyi
Yes.. you have to add corn starch.. other wise, your ja jang sauce will be too runny.. you want to have thicker sauce for it. ^^ thanks !!

englishredraider 3 years ago
Hi, englishredralder
Oh~~ That's cool you will move to Korea soon. Do you eat seafood ?? You don't have to worry about it.. There are many vegetable side-dishes in Korea. Just you might have to be careful about seafood if you don't eat seafood. Since we eat lots of seafood. Good thing is.. we also eat lo~~~ts of fish dishes. If you have any questions about Korea..please let me know. I hope you will have awesome time in Korea.

may I ask. What kind of noodles can i use for this?
ClaraTOD 3 years ago
Hi, ClaraTOD
^^ In any Korean store or asian store, you can find thick noodles for jajang myun (black bean paste noodles) or udong noodles. They sell both dried noodles or noodles in the freezer or refrigerator section. thanks !!

hi...i have a question?
is the cooking wine necessary for the meat, or can i use something else?
thanks in advance!
btw i plan to make this, this weekend =D
to0otz 3 years ago
Hi, to0otz
Yep..you are right..the cooking wine is for meat..to make the meat tender and remove the bad meat flavor..hehe If you don't have it, you can skip it.. it will not ruin your food. wow.. you are going to make it soon? assa !!! Please enjoy !! thanks :D

Hey Aeris, did you add all of the corn starch water in the pan??
ThePedoBrothers 3 years ago
Hi, ThePedoBrothers
Yes.. I added all of the corn starch water in the pan. It looks a little too much water.right??..but later it becomes thick..so that's the right amount. :D thanks for question !!!
aeriskitchen 3 years ago
Alright, I made it last night, but it tasted a little weird...I think it's from the black been paste...
Nonetheless, it was good experience for me because it's my first time cooking something like this
ThePedoBrothers 3 years ago
You know, I ate it again, the leftovers, tasted fine
ThePedoBrothers 3 years ago
Hi, ThePedoBrothers
haha... maybe you were not accustomed to that flavor then. My husband also liked it more and more after he eats it several times. I've never used chinese or other country black bean paste.. so if you used it, I can't tell the difference for the flavor..maybe it will be similar..maybe not..anyway..thank you for telling me the result ^^
aeriskitchen 3 years ago
No problem!
I think I'm going to make it again, so I can use up the leftover ingredients. You're right, the more I eat it, the better it is hahaha!
