  • i cant get rid of the bitter taste...i put much sugar in it but the taste was sweet and bitter at the same time.....i wonder if my black bean paste is bad ?

    usually.. black bean paste has bitter taste... it shouldn't be too bad though after you frying it .. did you use Korean brand ?? because I didn't try other country brand..

    I didn't try a Chinese black bean paste.. maybe that's why it was too bitter.. maybe not.. anyway.. you can keep it for a long time (more than a year).. unless it gets mold..

    I wonder if you fry it long enough.. at first.. it will be very thick and hard to stir..but with oil.. if you keep stirring while it's frying.. it will be smooth.. 

  • so I followed this recipe and made jja jang myun tonight, but i found that there is a slightly sour taste to jja jang... what did I do wrong? I used all the ingredients you used.

    taste is kinda off... like 'slightly sour' that i don't remember from when i ihad it korea growing up...

    any tips? ^___^

    It can be the brand you used for black bean paste.. each brand seem have different flavor..and homemade jajang myun is different from restaurant one.. for several reasons.. first.. they fry ingredients in real high temperature in wok.. second.. they use pork fat to fry the ingredients.. third they add msg in it.. with these reasons.. restaurant ones taste better.. Try other brand of black bean paste next time and see if it makes any difference. ^^

    i've tried ur jjajangmyun recipe..it was sooooooooooooooooooo good!!

    but i mixed it with both rice and my leftover spaghetti pasta....i put lil' bit indonesian red pepper sauce when i ate it with spaghetti pasta and the taste was brilliant!!i think i wanna make it again next time,hehe :D

    btw..can i put red pepper powder when i fry the chunjang?bcoz i love spicy food,yum~

    There is noodles for jajang myun or udong.. (not japanese udong)... both fresh noodles in a refrigerator section.. or frozen section.. or dried noodles ... the package will say that. Please visit my blog aeriskitchen com and research "thick noodle" then.. you can see the picture. thanks

    The sauce I made is for jajangmyun actually..I just poured it on top of rice instead of noodles.. so yes.. you can use it for your jajangmyun. ^^

  • I never tried the Jja-jang mee in Korea but my mom ever went to seoul on Jan and she fall in love wit the noodles, so the cooking u show here is the same they serve in the restaurant in Korea? and is it suppose to be spicy or non- spicy? lastly, the noodles is it refer to ramen or any type of noodle u can recommend?

    well.. homemade one and restaurant one are a little different... but similar.. for this dish..I think.. restaurant one tastes better..but I still like homemade version too.. yep..it's non spicy... thick noodles work for this..thanks

  • hi, i have try ur korean tofu soup recipe tat goes with rice n tested on my korean colleague and they said is good, thanks :). i have watched the cooking on Jja-jang bob and got a few query. Firstly, it's totally different from the chinese style cooking especially they uses minced meat rather than small cube size meat and the vegetable too , so is it possible that minced meat is used?

    Yeah. When I went to an authentic Chinese restaurant, I was expecting real ja jang meog. But Korean styled ja jang meog was served. I was surprised at that time. I don't dislike Korean one, but I wanted to taste a spicy noodle at that time.

  • chinese ja jang meon isn't black...we don't use black bean paste..we use meat sauce..personally i think it taste better

    if i'm not wrong i noticed that the beef is fried with no oil. normally my "non-stick" pan will still get the meat stick onto the pan. what is the brand model of the pan u're using?

    usually.. for this recipe.. people use pork instead of beef.. for my husband I use beef... the pork will give you oil to cook.. anyway.. the pan brand is.. "WearEver" ^^

    Oh.. cornstarch is kind of important ingredient for the sauce. Why you can't eat it ??? I will say.. you need it for jjajang myun.

  • the cornstarch is what makes the sauce thickens.

  • I like jajang with rice than noodles, it's heartier than noodles.

    Oh..I'm sorry to hear that it was too salty. What I can think is... maybe you eat food not salty...the black bean paste is salty ingredients... since you mix it with water and other vegetables..it becomes less salty later..and you eat it with noodles or rice.. so it helps... another thing I can think is... what kind of black bean paste you used.. didn't try other country black bean paste...but I can picture the flavor or saltness can be different.,did you use Korean one or Chinese?

    Oh~~ you have alergic to pumpkin..and zucchini... yes.. you can skip.. I will say..just increase the amount of other vegetables a little instead.. like potato..onion..black bean paste is a special paste for this black bean noodle dish.. we buy it from store.. don't make it at home. thanks :) big hug ~~

    If you don't have corn starch... add really tiny amount of water (few table spoons) and skip corn starch.. we call it "gan jja jang" in Korea... and cook sometime before you serve it. thanks !!! it will be saltier ...so think of the amount when you serve..

    Oh~~ That's cool you will move to Korea soon. Do you eat seafood ?? You don't have to worry about it.. There are many vegetable side-dishes in Korea. Just you might have to be careful about seafood if you don't eat seafood. Since we eat lots of seafood. Good thing is.. we also eat lo~~~ts of fish dishes.   • i brought the cha jiang paste, it is so sticky while i fry it.. your 4tbsp looks alot to me like 2 tbsp. now i put it in freezer cause wont use frequently n the paper seal when i remove it the plastic cover isnt tight, can you add more jia chang recipe so i can use up quickly lol

    ^^ In any Korean store or asian store, you can find thick noodles for jajang myun (black bean paste noodles) or udong noodles. They sell both dried noodles or noodles in the freezer or refrigerator section. thanks !!

    Yes.. I added all of the corn starch water in the pan. It looks a little too much water.right??..but later it becomes thick..so that's the right amount. :D thanks for question !!!
