i live in germany and i played on tourneys and stuff and compared to the good player here in germany he isnt arrogant at all... usually when ppl get better at sf like scumbag in evo 2k10 (dont want to talk bout that...) they think they are the real shit but daigo kind of seems friendly tho...i respect that

Also if you say "hanashimashou", it's the "we" or "let's" form just like you said with "hajimemashou" so there's no need for "wareware wa" which I have seen in books and heard in songs but never heard in a normal conversation (I'm in Japan at the moment doing a study abroad and it. is. marvelous.).

Anyway, if daigo drops -desu/masu when talking to you, you immediately do the same or it's like saying "thanks for being friendly with me, but I don't want to go that far". Pretty much the same reason why you should drop -san/-sama from his name. Japanese atmosphere is very tricky but I have dedicated the past few years to reading it and I will do anything I can to help you ^_^
