Trolling will show up if it's checked in the options screen (it is by default) and if the app sees a promising strategy for trolling. For example, if your target species is flathead catfish, or you've picked a date and location where the water is likely to be frozen, or you've selected "stream" as the type of body of water, etc., trolling will probably never be your best option, so you won't see it offered when you get to the technique screen.
I'm looking into developing a separate app for saltwater, since the factors effecting fishing are so different, especially tides and seasonal migrations.
I like the app. I am excited to use it for freshwater. Will you be adding saltwater species such as fluke, weakfish, drum, seabass, etc in the future? Also, striped bass are listed but the ocean is not available as a choice.

Pretty cool app. One question though. I see on your example you have trolling show up as one of your options. Why does it not show up for me?
