He doesn't give any indication of the ratios. He's wearing a t-shirt, which can be a bad idea when making a sauce at over 300 degrees. This is just bad.

You need to see when the butter starts to carmelize so you can drizzle it over your product. Also, by not giving ratios, he's not giving the viewer pertinent information to be able to repeat the process.
Why do all modern chefs think they need to move like they really need to go pee or are hyperactive?! It doesn't make the food any less good, if the chef and the camera are steady throughout the process... -_-.
I don't like this overly "dynamic" look of it much - it's just caramel, for god's sake. Stop trying to make it look cool and just cook...

@PwNyHoRsE Innuendo's right. You can bring the sugar to a lighter color (don't worry about time) or swirl in a couple tablespoons of cold heavy cream to arrest the cooking. Heavy cream is useful because it travels through the sugar faster than solid butter could. If you burned the milk solids, make sure the butter is in constant motion next time. Also, use a sweeter variety of apples, or a combination.

@watercatfish no, but if you don't you won't be able to pour your caramel, you can add water or cream as well to thin it. When you do make sure you do it with a stretched arm though, because it will boil right away but it won't burn or anything.

Heat sugar in a nonstick pan, and watch it slowly turn to a light brown, Warning!! Don't over cook it, burnt caramel is nasty! light brown is the color your looking for. The truth is your gonna find yourself doing this a few times before you get it right. Don't give up! When u get it, it's worth it.

@veroniki1109 thats a french technique of doing it, there is a recipe from careme which calls for heating up sugar without any water. i think you can find it in larousse gastronomique. or escoffier.

@97sniper caramel is deceptively hard to get right. there's a tiny line between just right in darkness and burnt. most likely you burnt the shit out of it. not his fault.

@1337x1337x Here somehting KINDa like it. Take maple syrup and put it in a paper bowl. NOT Plastic. It will melt :P Put it in the micro for about 25 secs. If you see bubles when it ocme sout you got the right temp. Stir with a spoon or fork until it becomes stiff. Then if you pull it apart you got little string sthat dry instantly. OR just add when its not stiff then stir xD

-you took the sugar too far (burning a tiny amount is enough to throw off the flavour of all of it)
-you burned the milk solids in the butter
this caramel here is too dark for my liking btw
