  • thank you for the simple step by step directions and the western indications as not having Moroccan pots, products, etc available has made it difficult to make couscous. And couscous in Morocco always seem to pop up all ready and made so I never learned how to make it! merci beaucoup

    I made few fish recipes already, check out my channel (shrimp pil-pil, moroccan sardines, fish essaouira style, baked fish with charmoula, etc.). For the music, I can not use any music unless I have the copy rights because I am a youtube parter, and they put advertisement in my channel. so any music I used, I have to have the copy rights of it.

  • Thank you!!! the first few videos I had someone help me with the filming, but after that it was only me and my tripod! I edit my own videos using adobe premiere, great software! so it's a 1 woman show! you could tell that I am using on my tripod because there are no zoom ins and zoom outs when I am in front of the camera :-)

    I am still learning couple of tricks with the software as I am doing more and more videos. so thank you for the your message it really encourages me :-)

  • Hi Alia! Well.... the coucscous was a disaster! LOL We never made it with sweet potato or squash before and it really feel apart quickly in the sauce and turned it into more of a stew. Out sweet potato cooked VERY quickly and hubby did not like the sweetness of it. We will make it vegitarian again but without the sweet potato. I love turnip in the sauce so we will replace it with that and white potato maybe.

  • couscous is one of my favorite dishes! you can make the non-vegetarian option by adding chicken or meat and doubling the spices.

    The saffron powder I used can be replaced by Turmeric which is found more easily.

  • why do you leave the vegetables all really big? wont it take longer to cook and harder for the flavour of the broth to distribute throughout the vegetables?

  • except carrot all the other vegetables are very soft. so we have to cut big pieces, for the carrot that size makes a nice loolking for the presentation.

  • Just a clarification for n. americans about coriander: we call it cilantro. If you look for coriander in our grocery stores, they will send you to the dry spices! :)

  • hey i i just love the way you teach :) i have a request i allways like to try dishes from different cuntries theres this dish i tried once and i think its called Kofta it was meatballs with something hha dont rememba really well so yh i was wondering if you could make a video about that if its not a problem of course thank you xx

  • I am glad you like it! yeah, Kofta is ground meat with spices, it can be in a tajine with tomato sauce and eggs, or it is barbequed. I already made a video, let me know if this is what you are looking for under the name of "tajine of kefta with eggs" (was not able to copy the link and poste the comment) - you can find it in my channel.

  • Hi Mariam,

    I made this couscous vegetarian as it was a request from a viewer, but you can absolutely add meat. You can add lamb meat or chicken drums. Add the meat in the beginning with the onions and let it cook for a bit while you are stirring. You will have to double the amount of spices (to your taste of course). Hope this helps!

  • Hi. I just want to make clear that my videos are targeting Moroccans and non-Moroccans who live outside of morocco and do not have access to all the tools and ingredients that we find in Morocco. Also, I am simplifying the recipes because life can be extremely busy for some of us with careers and we dont have the luxury of time. so I hope that before you put a negative comment out there, you understand the purpose of my videos.   • Absolutely!

    You can add lamb meat or chicken drums. Add them in the beginning with the onions and let them cook for bit while you are stirring constantly. You might have to add the spices a little bit (taste and see), but the meat will be boiled with the vegetables and will get all the flavors. hope this helps!
