    You can adjust the amount of saltness with soy bean paste with your taste.

    soup soy sauce is similar with normal soy sauce.. just it's especially made for making soup..

    Korean Soybean paste is stronger in smell and taste. Miso is Japanese. The two soup bases taste completely different even if they're both made out of soybeans.

  • i have several questions:

    1) can i omit sugar? would it still taste the same? what if i replace it with honey? i'm trying somewhat to reduce sugar n salt intake.

    2) can i eat the kelp after boiling it hehheh

    3) why should we remove the foam?

    4) can i omit hot pepper powder and pepper but instead put lotsa of hotpepper paste?

    thanks a lot, i might try this recipe soon, seems easy enough for a cooking rookie like me

    these are my answers ^^ 1) you can omit sugar or just reduce a little. 2) some people say.. it's not good to eat the kelp after it boiles certain time..but not sure how accurate that is.. so it's up to you. 3) to get better flavor.. 4) hot pepper paste and hot pepper powder has different flavor.. so it will change the soup flavor a little..

    i'm not the channel owner, but i do cook quite a bit~~ your comment is hilarious...

    i figure if you fry some onions and beef (gotta get flavor somewhere~~), you can put the canned vegetables in and which ever tofu you got^^

    should go well with plain rice~~ or, you could add some noodles to your soup directly~! that's even faster... mind that you need to have plenty of excess water if you'r going with the noodles, and choose thin noodles~

    it's not too hot..and if you can't eat hot food.. you can reduce the amount for spicy ingredients.. kelp is a kind of dried seaweed.. usually use for making broth ..

  • What kind of Tofu did you use. firm,soft? What if you can't find Dried Anchovy pack. Can you still omit them?

    I use soft (but not extra soft) for this soup. You can use just dried anchovy instead or yes.. skip it.. if you have stock powder for flavor.. you can use it instead too. thanks

    It can be depend on how dry your mushrooms are... but mine usually takes less than 5 minutes.. whenever your mushroom become soft.. that's enough.. ^^

    unni means.. "older sister" in Korean..we use that word not only to a real sister... but also to a girl who is older than me.. but it is only works between girls.. thanks

    soup soy sauce is... kind of soy sauce.. particularly made for soup.. you can just use normal soy sauce for recipe if you don't have soup soy sauce.. thanks

    It takes 40 minutes for me to go to a small Korean grocery store.. I like to go assi plaza or H-mart..if we go to a big city that has big Korean markets..

  • my mom actually puts the soybean paste in before the vegetables, is it alright to do that or is there a specefic reason the the order of the way you make it?

    if so, can i pu the red pepper past at the same time also or should i do that with the flakes after all the veggies?

    Your mom is right. you can add the soy bean paste and red pepper powder before vegetables.. or you can add later.. I don't think it's the big deal.. ^^ When you cook the broth in high temperature.. you lose some of the broth while it's boiling..(at the end.. your broth can be salty if you lose too much broth..) so you want to cook vegetables like potato..which takes time to cook... ahead of other things... that was my reason doing that..but again.. it's not that big deal..

    regular soy sauce is.. ganjang and soup soy sauce is guk ganjang in Korean.. the process to make them are slightly different..and the flavor are a little different too..

  • @12ock no they're different. Japanese miso paste tends to be less stronger and smells differently than Korean soybean paste. They taste different also

  • @12ock it's a bit different. the way of fermenting soybeans comes from mainland Asia, and then it was spread to Japan. the Korean soybean paste is very strong both in taste and smell than Japanese miso soup. It also has a darker colour.

    similar but.. the taste is slightly different.. and doenjang has soy bean chunk in it..and miso doesn't..

  • @jajangmyunlove4121 Miso is more mild (shiro miso) which is the most common used for breakfast or in japanese restuarnts in forign countries. dwaenjang is stranger and like aeriskictchen said dwaenjang has chunks of soybean in it.

    But I also found Miso u can buy in the shops has Mirin or acohol(dwaenjang dose not) in it and remends me of peanut butter in taste and also is more sweet and the taste is not as fermented

    well it's more complex than what you think.. it need fermenting process too.. it's basically sweet rice flour and hot pepper powder..but you need something else too ..
