The jumpyness is something I also see in Johnny Chung Lees implementation. I think its due to the reason that the z-coordinate is calculated by the distance of the two infrared points - which is off course very bad in sensitivity if you compare it to the simple tracking of the points for x and y movement.
I wrote an algorithm to get rid of that jumpyness. Wanted to mail you about it, but the address you gave on the website seems to not work any more.

maybe the ir light is being reflected on your camera or something
