You never mention what to do with the 1/4 cup chopped basil. I imagine we are supposed to mix it in with the parsley and ricotta? FYI:You kind of skipped that part in the video and in the instructions on your website.

I've tried to make this once before but the skin of the eggplant came out tough. Can you tell me what I probably did wrong? I would like to try it again with the skin (don't want to loose any nutrients). How did your skin turn out?
