  • This dish looks amazing!!! Although I would consider it more of a eggplant lasagna than a parmesan. I will be trying this.

  • Looks really good, I've recently learned to appreciate egg plant and make it all the time now. Oh here's a tip; Ri"cotta" is actually pronounced Rigoata (with an italian accent! ;) try it!

  • I'm not convinced that cooking spray is good for you. I've tried them - olive oil, butter, and (think) it was canola oil, anyway, they have a chemical odor and taste. I'll stick with olive oil. Yes, it has a few more calories but we know it's good for you.

My husband said he was "surprised it was soo good even though it didnt have any meat!" Lol hes a "meat" man supposedly smh! Thank you for the great recipes and easy cooking! Keep them coming!

  • I've tried to make this once before but the skin of the eggplant came out tough. Can you tell me what I probably did wrong? I would like to try it again with the skin (don't want to loose any nutrients). How did your skin turn out?
