I think its due to the reflection of the wave against the newly broken ends of the spaghetti. I am willing to bet that if you watched this on high speed, it would break cleanly in the middle, and i bet you could see the wave travel to the fingers, and then back to the broken ends. Brilliant call on the twisting!
It just seems to me that if the spaghetti makers of the world wanted their product to be broken in half, they would simply make it & package it that size to begin with. Why break it? Also, the boxes they come in fit just right in my cupboard.
If you don't like the length of it, why not solicit the manufacturers of spaghetti?

I usually hold the spheghetti in the middle when breaking it because I like the small pieces and throw it all in the boiling water with the chopped tomato and onions and a single egg, use chicken stock instead of salt also

This is so simple. Do it the way I always do it: use a chainsaw.
Personally, I use my Stihl 441 5-1/2 hp and be sure not to use the winter-grade bar lube (it sticks to much for indoor use).
