Over all Very Nicely Prepared... I personaly enjoy my steak t be more on the rare side, for me its slap it on the ass and send it in but i usually dont put it in the oven for more then 2 min
You burnt the hell out of that steak. You started with a cold pan and then just left it to burn on full heat. You want a slightly under smoke point cast iron pan that you reduce after about 1 minute. This will promote a maillard reaction giving you a nice brown crust (not black). Pepper burns and turns to carbon giving a bitter taste to the meat, especially at a temp you were cooking at. With pepper you need to reduce the heat even more.
Looks good to me, but I would throw that wimpy pan away and get some cast iron! I use a Lodge cast iron grill-pan under the gas broiler in my oven. You can make incredible steak that way. You could also use a cast iron skillet on the stove top as well.
Searing cooks the outside carmelising the sugars and creating a complex set of flavors. This is called the maillard reaction. The doneness is determined by how long you cook it in the oven for.
Now you know you're not suppose to grill a steak in a pan but on a pit:-( This video made me realize how cruel this world is. Steak looks good though:)
I have access to a decent grill. However I find that with a good cut of beef, this method provides a much tastier finished steak. I follow bens method almost exactly, the only thing I do different is I hit the broiler for a minute or so to add that "broiled" flavor. I will take this over a grilled steak any day :)
Insted of adding the salt directly and cooking with it, you should try adding the sea salt on first, let it sit for about 20min to an hour, then rinse off the steak. And I mean cake it in sea salt, believe me, works charms ;) You'll notice a lot of water coming to the top after a little bit, you want to rinse it all off then pat it dry. Then add the crushed pepper and grill/fry! Makes it incredibly tender and dont worry, the salt mostly washes off, it doesnt linger and ruin the steak :P
lol...looks like you're gonna need any bottle of alcohol. Do you know why the non-stick pans are bad for us? Is it the chemicals they us for non stick?
steak looks good. but i would put the oil on the steak not in the pan. iw ould deffinatly eat the shit out of that steak though!

Im a huge fan of peppercorn, your recipe is very simple yet amazing, very strong flavor yet subtle with the potato, may I suggest some lemon cream?
