The Soul Eater anime was produced by Bones, the same guys that did Full Metal Alchemist. If anyone reads manga, you'll notice that the first FMA series went totally awry from the manga, and also had 51 episodes. The new FMA: Brotherhood is more accurately following the maga and has already hit 55 episodes and still going.

To sum it up, Don't be surprised when Bones makes a new Soul Eater anime that more closely follows the manga and is longer, just like FMA: Brotherhood.
