You apparently have a misconception of how portland cement works. Cement doesn't harden by drying, it hardens by setting up in a chemical reaction, which the water makes possible. By placing your forms in the sun uncovered, you're not getting as much strength as you could have.
If you can't get your molds in the shade, then cover them with plastic or damp burlap after the initial set.
I'd like to see you toss one up in the air and let it hit concrete. I wonder what would happen?
