  • omg nicko... please rename this recipie to modified fried rice because this is not how fried rice is cooked at all ): you're free to cook it however you want, but please do give some respect to how its originally cooked and do some research as to how its REALLY cooked.

  • im a chinese , usually we first fry the rice and then add in the egg and other toppings, then add some soya sauce (some may add salt instead) and stir fry it all together . you did it in a different way lol

  • its best to cook the rice the day before and chillit or use leftover rice,the rice holds its shape better

  • great recipe btw... I like to use all the ingredients you used but i also like to add corn to my fried rice cuz i think the colour and flavour it adds is truly phenomenal... I usually fry up my egg sepperately or in the wok before i add my vegies and take it out but i think ill try your way next. Ever tried frying up your bacon before hand and using the bacon fat as your oil base rather than adding extra oil? It works pretty well :)

  • heres a tip for your pre cooked rice. give it a wash with water in a colander to separae the grains then you wont get clumps and when u are cooking the rice use less water then you usually would so the rice is drier and not soggy like steamed rice, also throw in a bit of oyster sauce for xtra flavour and if you want color kecap sauce.

  • In Cantonese/Hong Kong style, we prefer fried rice to be dry. (and to be perfect, every single grain of rice does not stick with each other) To remove the moisture in the rice so that it doesnt stick to the wok, it is better to cook the rice hours before and put it in the fridge overnight! ;)

    i am asian and i can say (after cooking fried rice for 15 years) this method is correct. I tried many types of rice and I find that sticky white rice works the best.

    The rice does not soak up the egg... that is impossible.. The reason why it probably looked wet was because of his choice of rice.

  • That was really good Niko! If you wanted your fried rice to be more 'oriental' and 'traditional' try replacing the vegetable oil with sesame oil as it gives more of an aroma. Also, chinese people tend to use white/black pepper as well in the dish :)

    I come from a Chinese heritage so try adding some chinese ingredients if you happen to have a local asian grocery.

    Try adding in some chopped up lap chung ! They're delicious and they're in all traditional fried rice dishes ! Google it up ! Should try them out ^^

  • @romanticloud ok, couple of things, its not wet.....did you not see the end product? Fried rice should not be dry, it needs moisture. The rice was 6 hours old, how could it be wet? it makes no difference if the egg is beaten or whole, it ends up scrambled anyway. I have no idea what "essence of egg" is, odd term for it. The wok was hot, and if you actually listened to what I said, I did day it happens very quickly and you need it piping hot. Please don't pick apart a video you haven't watched.

  • @robjnixon My favourtie way to add eggs is making omelettes and cutting them up into slivers to add last to the fried rice. Unfortunately .... tastes so darn yummy it is lucky to get into the dish.

  • good attempt but it is a lttle wet for the rice, maybe you can try beating the eggs first then pour into the rice and let the rice soak up the essence from the eggs before you putting it into the wok. Take note when you put the rice with the eggs into the wok, it has to be really really hot so the eggs can cook quickly and coat the rice.

  • When I make fried rice, I use chicken and a Korean meat called "Galbi"

    It's a Korean rib meat that tastes AMAZING when properly marinated and barbequed.
