heres a tip for your pre cooked rice. give it a wash with water in a colander to separae the grains then you wont get clumps and when u are cooking the rice use less water then you usually would so the rice is drier and not soggy like steamed rice, also throw in a bit of oyster sauce for xtra flavour and if you want color kecap sauce.
In Cantonese/Hong Kong style, we prefer fried rice to be dry. (and to be perfect, every single grain of rice does not stick with each other) To remove the moisture in the rice so that it doesnt stick to the wok, it is better to cook the rice hours before and put it in the fridge overnight! ;)

@romanticloud ok, couple of things, its not wet.....did you not see the end product? Fried rice should not be dry, it needs moisture. The rice was 6 hours old, how could it be wet? it makes no difference if the egg is beaten or whole, it ends up scrambled anyway. I have no idea what "essence of egg" is, odd term for it. The wok was hot, and if you actually listened to what I said, I did day it happens very quickly and you need it piping hot. Please don't pick apart a video you haven't watched.

Try adding in some chopped up lap chung ! They're delicious and they're in all traditional fried rice dishes ! Google it up ! Should try them out ^^

When I make fried rice, I use chicken and a Korean meat called "Galbi"
It's a Korean rib meat that tastes AMAZING when properly marinated and barbequed.
