In, Nigeria, its either u use goat meat or u use the entrails of a cow. Thirdly, it is incorrect to say that tough meat is all that is found in Africa. I think the last time u took a trip to Nigeria was like 1882 or smth. Forth, fried shallots as a topper? Pressure cooker? Brown stock? comon! If u developed ur stock, u wont need brown stock!
@neboyterry She tweeked the recipe a bit, I don't think there is a need for you to be so snobbish about it. People have been changing recipes and making them their own since the beginning of time. The lovely Nigerian restaurant I used to frequent in Chicago, "Vee-Vee's" used both goat and tripe if you asked them too. Relax.
