As a test to see if oil is hot enough, test one or two strands to see if they bloom in the oil. if not, wait a bit longer for the oil to heat or you will destroy your noodles!

This is a great question. I like them this way because they have a hard crunch rather than a puffy crunch. The key is to make sure the noodles are pretty much dry before placing them in the oil and serve them right away. If they are not dry, they can come out with a stale cruch. They also don't keep well like the others will. Thanks for writing this :)

How about using a salad spinner to dry out the noodles? Or would that be too brutal?

Some other recipes put the dried noodles directly into hot oil. It puffs up. The results seem to be crunchy. Does this result in crispier noodles?
I just want to avoid the splashing oil, but if the finished texture is right I'll put up with it.
