pentatonic and blues are scales and not keys. There are only 12 keys, because for example c major has the same notes as a minor, and d dorian, e phrygian and so on. and jazz musicians usually doesn't write songs in modal keys, they're only used as scales.

When you speak of playing in a key, that is playing in a scale. yes for western music there are only 12 physical keys on a keyboards, but playing in a key(or scale or mode) is more specific. And while some kkeys share a key signature, there are alterartions and application differences. Many jazz musicians do use mixolydian a lot, however they make the adjustments not in the key signature, but by accidentals. I just love destroying "expert" village.
