  • that is a LOT of oil

  • it just proves alot of western chefs are wrong about saying that cooking omlettes on high powered stoves at high heat very quickly makes them over cooked and tough. Its all about technique.

  • I did it using chopsticks and it came out perfectly! So that's the secret!

  • Sure looked brilliant at the end. I'm just a tad surprised he fried it in oil and not butter as I find butter makes for a much better flavour i.m.h.o, but hey, great techniques shown and the cream makes it kinda buttery sorta.

  • @ringkingpin umm..actually, using chopssticks to bind the yolks and egg whites together is ONE technique that works well. You should try it. Even Julia Childs herself have been known for doing it! And for the record, He's considered a "French Chef" probably because his forte is in French cuisine. Not because he's French (as in ethnically) lol. And were you reffering to him as a shoemaker? or the Japanese as shoemakers? Maybe, but fyi, you're probably living or using Japanese technology.

  • @YapiKredi Practice. What he's doing with the pan and his chop sticks looks easy, but it's really hard in it's subtly. The pan moves back and forth, and the chop sticks move in a circle. Knowing when to start stirring is key. Also, notice, that he cooks on very high heat and manages the temperature by raising and lowering the pan. He's a master, but he should be using clarified butter, not oil.

  • @ringkingpin Your parents did a fantastic job instilling confidence in you. Too bad they didn't do as well with humility. Your technique is terrible, this guy has it correct. You lean on a non-stick pan to prop up your horrible technique, he makes his in a proper pan. You are lazy and sloppy, he is clean and efficient. The fact that he serves his omelette a bit more country than city is a matter of taste; he knows exactly what's happening to those eggs second by second.

    When I was working in the Escoffier kitchen at the Ritz in Paris, I would have been fired for making an omelette like that. City vs country? What the hell are you talking about? A French Omelette isn't supposed to have any skin but you already know that, right? Now get back to your nut hugging.

  • @ringkingpin You just lost. You're telling stories. The closest you've ever been to a starred kitchen is being thrown in one's dumpster by 45 year old, 120 pound French toughs. Go back to your 20 year old electric stove, awesome foil BTW, crusted in 2 years of oil and slop egg onto yourself, the stove and your coffee mug.

  • This was my first choice video to watch and the one I came back to to make my omelette. It didn't turn out like Chef Kondo's in appearance but in taste it was the best omelette I have ever made. Hats off to Chef Kondo!

  • Whenever I try this the inside of the omelette still has runny egg but I don't have it on too high as I don't get the bubbles (caused by a higher heat, yes?)

  • Thank you 904TV for posting this! It is the most appealing, quickest and maybe the best way to make an omelette! However, it is not the easiest way... I have tried a few times now and although it is getting better, I have not mastered it at all yet. I will carry on practising till I get it perfect though. Beautifylly done!

  • @Chnamanjx .... look up "black steel" and then season the shit out of them like you would a cast iron pan.... it takes time but it's worth it.

    Basically, the constant agitation of the eggs will keep them from scrambling. You'll notice with the French method that they shake the entire pan, rather than the American way of just using a fork or spatula to keep moving the egg to the outside of the pan...

  • theres so many ways to make an omlette not just what somebody else does. Every way is different and depends what technique you like to cook with

  • milk has sugar in it which burns. that's why there was burned bits on the outside of your omelette. also, why use oil -- the french would use butter. imperfect, I'd say. sorry. check out my omelette!

  • I've tried it and it's really an easy, simple and nice dish! My first try however was not that good cause i didnt reduce the heat right after pouring the egg on the hot pan. My egg got burnt a bit for not reducing the heat. Those who wish to try better be aware of this :) I used 2 eggs and 2 cheddar cheese and substituted the sauce with pasta sauce but its still great. Finally, I've added some boiled broccoli and carrots to make it a complete meal =) Thanks for posting this vid!
