@ringkingpin umm..actually, using chopssticks to bind the yolks and egg whites together is ONE technique that works well. You should try it. Even Julia Childs herself have been known for doing it! And for the record, He's considered a "French Chef" probably because his forte is in French cuisine. Not because he's French (as in ethnically) lol. And were you reffering to him as a shoemaker? or the Japanese as shoemakers? Maybe, but fyi, you're probably living or using Japanese technology.

Knowing when to start stirring is key. Also, notice, that he cooks on very high heat and manages the temperature by raising and lowering the pan. He's a master, but he should be using clarified butter, not oil.

This was my first choice video to watch and the one I came back to to make my omelette. It didn't turn out like Chef Kondo's in appearance but in taste it was the best omelette I have ever made. Hats off to Chef Kondo!
Whenever I try this the inside of the omelette still has runny egg but I don't have it on too high as I don't get the bubbles (caused by a higher heat, yes?)
Does anyone know what kind of omelette-pan Mr. Kondo is using here? I guess it is not a "non-stick" but is it cast-iron or steel and where could I buy this kind of omelette-pan?

@KongIsBored AGREED! People have the wrong idea of what a true French Omelette is. Look at Julia Child's Omelette or Jacque Pepin omelette omelette. Then look at all other videos and you'll see a difference...
Basically, the constant agitation of the eggs will keep them from scrambling. You'll notice with the French method that they shake the entire pan, rather than the American way of just using a fork or spatula to keep moving the egg to the outside of the pan...

milk has sugar in it which burns. that's why there was burned bits on the outside of your omelette. also, why use oil -- the french would use butter. imperfect, I'd say. sorry. check out my omelette!
I've tried it and it's really an easy, simple and nice dish! My first try however was not that good cause i didnt reduce the heat right after pouring the egg on the hot pan. My egg got burnt a bit for not reducing the heat. Those who wish to try better be aware of this :) I used 2 eggs and 2 cheddar cheese and substituted the sauce with pasta sauce but its still great. Finally, I've added some boiled broccoli and carrots to make it a complete meal =) Thanks for posting this vid!
