I know PLENTY of Jamaicans who always ALWAYS put carrots in their curry goat! they also clean it with lime juice and sometime vinegar. Most restaurants in the us screw up every recipe they try to attempt. If you're eating curried goat that is green you might want to find a jamaican house somewhere having a bbq and learn how to do it right! ChefJay seems to have the right idea though for sure!

in the caribbean we only put coconut milk in if we happen to put too much curry in it & 1 tbs of curry isnt enough fa e curry goat. yes is curry goat BUT NOT CARIBBEAN CURRY GOAT & there is nothing as caribbean curr goat cause the techniques used r different on all d islands. note your technique isnt caribbean.
you'll need west indian blend curry preferably from jamaica they make curry goat a past time
escallions or green onions
regular onions garlic thyme scotch bonnet peppers ginger pimento berries you guys call it alspice potatoes and carrot if you chose.
cut the goat in small pieces as big as an eg yolk. season with tonys creole seasoning diced onions and escallions ginger pimento berries garlic all of that stuff. 5tbs currin in hot oil
until the colour changes. saute the goat in the curry oil and cover do not add water until the seasonings and the curry have had a chance to work its way into the meat othewise youll end up with bland meat and wonderful gravey add a little water and the pepper and cook down till really tender. add carrot and poato in the last 10-15mins of the meal
unfortunately we dont use precise measurements its based on the intense colour that we know we have enough curry cause the curry u buy today may not be the same strength of the curry you buy tomorrow. the finished meal should have a deep yellow to light green look the goat makes the curry look darker

we dont use measurements but i would guess enough the kinda dissolve the curry. its based on how much meat you have. too little curry powder and oil mean the curry wont soak into the meat properly and too much will kinda have a numbing feeling on the tongue. its important that you let the meat sweat and cause you only add water once

The goat meat used is a category 3 meat which means that it can stand up very well to low long cooking times. The connective tissues breakdown to add a very rich thick sauce to the finished dish. The meat will be soft and tender as long as you do not let it boil. If you let the liquid boil it will make the meat dry and very very rubbery
