Ah i just remebered you can get the Kusa peeler from her site, she also sells spices and other stuff!she is in the states too! but her native homeland is Lebanon!
I have just subscribed and I am amazed at the selection of recipes you have!. At home we make this zucchini -mexican style substituting cheese by shredded / cubed chicken or ground or roasted turkey, add a dash of cumin if your veggies dont have it. It can be enjoyed as a main dish with rice on the side. Yummy...
The sauce i will make it in will be a tomato sauce, which i will add dried mint too! i am not exactly sure if you can get this tool in the states, perhaps you can in a Middle Eastern store! I know there are plenty here in Saudi Arabia! the tool is called a Kusa peeler!

Betty i think your recipes are wonderful, EGO mentioned about the stuffed Zucchini, called Kousa Mahshi, i have a link for that recipe if your intrested Betty, the lady cooks Middle Eastern and Mediterranean dishes., but for the Kousa Mahshi you need a special tool to hollow out the zucchini, in fact i bought one this evening and the ingredients to go alongside it!

Hi! Yes, a green pepper would be fine--just don't expect that hot Mexican flavor. If you want to make it taste more "Mexican," add a little chili powder and cumin, if you have it. But the green pepper alone will be fine! Thanks for your question!
as always Betty that looks very good. it is funny you put this recipe up because I was just givin a Zucchini yesterday and I had no Idea what to make with it. now for a question, if I ommit the chilie could I use a green pepper insted? do you think that would taste good?

Where I live we stuff Zucchini with rice, meat & herbs then cook it in a tomato sweet sour sauce, we call it Kousa Mahshi :)
