  • wow looks yumm, how you stay in such good shape betty!?

  • Thanks! I eat *lots* of fruits and vegetables and tuna! When I eat sugary or fatty foods, I only eat very small portions. And, I try to work out 4 days a week! Thanks for your nice comment!

  • You can order the peeler from her site!

  • I will be visiting her site to see all that she does! Thanks for the tip, Lucy!

  • Betty i made your Mac and cheese the otherday it was delicious, i used cheddar cheese though because i couldnt find valveeta in the supermarket!

  • That's great, Lucy! And cheddar cheese is fine for that!

  • Ah i just remebered you can get the Kusa peeler from her site, she also sells spices and other stuff!she is in the states too! but her native homeland is Lebanon!

  • I will do an internet search for the peeler and see what I can turn up! Thanks for the tip, Lucy!

  • A restaurant near me serves something like this on a pita bread as a sandwich. Just a thought for your fans.

  • It would make a wonderful vegetarian sandwich! Pita bread is perfect!!! Thanks, Patsy!

  • I have just subscribed and I am amazed at the selection of recipes you have!. At home we make this zucchini -mexican style substituting cheese by shredded / cubed chicken or ground or roasted turkey, add a dash of cumin if your veggies dont have it. It can be enjoyed as a main dish with rice on the side. Yummy...

  • That sounds wonderful! I like the idea of turning it into a main dish! Thanks for your nice comment!

  • Betty what kind of knife do you usefor chopping where can it be bought??? Maybe you can do a quick tip on sharpening knives

  • I use a chef's knife (Chicago Cutlery) for chopping. Maybe I can do something on knives sometime! Thanks for your comment!

  • The sauce i will make it in will be a tomato sauce, which i will add dried mint too! i am not exactly sure if you can get this tool in the states, perhaps you can in a Middle Eastern store! I know there are plenty here in Saudi Arabia! the tool is called a Kusa peeler!

  • Your recipe sounds delicious, Lucy! I don't think I can find the Kusa peeler--maybe on the internet, or maybe there is a Middle Eastern store in Lexington--a larger town about 25 miles away. Thanks for the idea, and thanks for your generous comment!

  • Betty i think your recipes are wonderful, EGO mentioned about the stuffed Zucchini, called Kousa Mahshi, i have a link for that recipe if your intrested Betty, the lady cooks Middle Eastern and Mediterranean dishes., but for the Kousa Mahshi you need a special tool to hollow out the zucchini, in fact i bought one this evening and the ingredients to go alongside it!

  • Hi Lucy! That sounds very interesting! I don't think I would be able to find the tool to hollow out the zucchini--my town doesn't have a specialty store for cooking utensils. The idea of stuffed zucchini sounds great!

  • I love this simple and healthy dish! I can make a batch of this and keep it in my fridge =]

  • Actually, the recipe I gave was 1/2-recipe, so you may want to double it! It did not go very far with my husband and me! Thanks for commenting!

  • I used to buy a frozen thing like this, but they had some rotini pasta in it. Now I can make my own, thanks.

  • I think you will really like this; just watch out for the heat in the green chiles! Thanks for your lovely comment!

  • I adore you vegetable dishes they are healthy & delicious :)

Where I live we stuff Zucchini with rice, meat & herbs then cook it in a tomato sweet sour sauce, we call it Kousa Mahshi :)

  • Thanks! The way you prepare zucchini sounds great! I would like to try it! Thanks for your sweet comment!

  • Hi! Yes, a green pepper would be fine--just don't expect that hot Mexican flavor. If you want to make it taste more "Mexican," add a little chili powder and cumin, if you have it. But the green pepper alone will be fine! Thanks for your question!

    --Betty :)

  • as always Betty that looks very good. it is funny you put this recipe up because I was just givin a Zucchini yesterday and I had no Idea what to make with it. now for a question, if I ommit the chilie could I use a green pepper insted? do you think that would taste good?
