@yujinwu they actually do. water molecules tend to hold themselves together. a form of weak attraction. thats why you can get the water level of a cup slightly over the top and still not spill. because the water molecules hold themselves together :)
I think that thermometer's faulty. The first time you measured the surface, it measured 152.5. Then you dropped water into the pan and the water immediately boiled, placing the surface temperature at 212 or above.
i got a fluke 1AC IR Thermometer it just has a laser that u point at an object and its accurate it goes up to 932 degrees but its nice to have if u do a lot of experiments and it gives a consent reading of the temp
