JoAnn I am a natural veggie lover anyway so this is not hard for me..still do baked fish every now and then. Cooked the 15 bean this past weekend added onions and Mrs. Dash spices...Absoultely delicious...hubby loved them...No you don't need to cook your beans with "fat back" etc.... Love what you (we) are doing...treating our bodies as we should...keep the motivation coming...Love Ya!!!!
Have you tried BOCA or Tempeh... I'm not cool with Tempeh but it does work in a pinch... also TVP.. for making your own Veggie Patties. I use Tvp and Falafel Powder to make the patties..
if you have a little more time in hand, trying skipping the already sliced veggies, they are more expensive. Just buy the whole onion, bell peppers etc and on Sunday cut them all up and have them ready for the week

Try getting some Raw Chocolate covered Dried Mulberries for a treat - delicious. They are really rich tasting. I love sprouts - especially alfafa. I wish we had the Hickory BBQ Riblets in the UK *sigh* You might want to watch some Raw Food recipes for tasty and interesting things to do with raw veggies. Also don't forget to try eating some nuts and seeds as snacks or sprinkled on salads etc.
I enjoy the Morningstar crumbles as well. I have used them in many recipes that would normally call for ground beef. I especially love making nachos and tacos with them. You just sprinkle a little taco seasoning in and go! My 12 year old even loves it....
I really love dry fruit too! Wild blueberries are so good for you:) My husband really likes veggie burgers, but I've never tried the morning star grillers. I like to buy Nature's Path cereal to have instead of chips, I get the crunch I like, but much more healthier.
Please do some cooking videos so we can see how you like to prepare some of the meals you described. I would love to try the things you mentioned, especially the mushrooms and wraps.

Thank you so much for the tips!!! I have been doing something similar, but on a much smaller scale. I try to avoid the microwave as much as possible, so I use a Thermos for my bean soups and stir-frys. It keeps food hot all day long! God Bless you for sharing your journey. Theres another good product that some super markets carry called Shirataki. They make in the shape of angel hair, bow ties and fettucini. Its a soy pasta like ingredient.
Im on Atkins and it works well for me. Its hard to get use to. I miss rice. Im use to no bread, sugar etc.. I love hearing the veggie stuff as I have thought of making a change some point & researching what else I can do. My obstacle is curbing the munchie monster, having energy & feeling filled. My youngest daughter and I have been veg for almost 4 yrs and we are more in tune with what foods give us a bad response, like candy and junk food in general. She ate a candy bar today and when she crashed, she was miserable. She loves that Bolthouse. I can't get passed the look of it. My daughter cubes the tofu, puts it in a skillet with a little olive oil, soy sauce and chili power and we love it. I need to try V8 again.

@JoAnnGray a good site to get vegan and vegetarian recipes is vegweb(dot)com!!! there are a lot of tofu recipes! Some years ago I made some tofu burgers and he tour it up,......when he found out that tofu was the main ingredient he was shocked. Currently I have overhauled our diet, because my daughter was developing precocious puberty because of the hormones in the meat and milk we were eating and that she was consuming at school. She is okay now, but we consume no dairy or meat in our home!

Good for you! I went veggie back in July and I've dropped anout 17lbs and feel soo much better. My favorite snack is a green smoothie. I take two handfuls of spinach, 1 banana, strawberries, and mango and throw that all in the blender. It's really deelish. . .you don't even taste the spinach. Thanks for sharing!!

@preciousfour3 No, not at all. I work 40 hours and school 32 hours a week. My eating habits for the last 3 months had spiraled out of control ie. fast food daily. I gained the 15lbs that most do returning to school and it was only going to get worse. When I said that I feel better, I mean that. I was becoming winded and tired easily and losing concentration. I always know what to do, it was a matter of choosing life and three wks ago was when I was ready and I haven't looked back.
I have an awesome spinich tofu lasagna recipe but I cannot make it because I can't find the tofu anywhere around my area, and I even ordered the whole grain noodles. I'm upset that tofu isn't readily availible in my area. Great ideas on the foods especially the mushroom burgers... they are amazing!
@75Nikkinik Oh I hate that the things you want aren't readily available in your area. I would love to know about that recipe. Of course, I'm going to mix the two (spinach and tofu) in the skillet somehow.

Then I'm finished. Mod two starts the first Tuesday in October. This Friday concludes the first 15 weeks. I'm loving it. I'll do an update next week on school since I'll will be on a week break before things heat up again. Keep me in prayer.
