When I stir fry, I normally mix all my liquids together as soy, broth, wine with corn starch, then add last after everything is cooked.

how do you devein shrimp?

just use a paring knife and place a thin slit down the back side of the shrimp. Then rinse the sand and vein out.

Shouldn't the shrimp be added until the end since it cooks so quickly and toughens up after it's been overcooked?

i only cook the shrimp briefly and then remove it to prevent overcooking, i return it just when the dish is finished... i think this method keeps the flavours cleaner - but you could add it at the end if you want
