  • I don't put a caramel 'crunch" I would just use caramel topping, or something like that, to get that caramel taste/flavour in there :)

  • I did the coffee muffins a couple of days ago. I added almond rocas, but unfortunatley they all melted completely (I was hoping that I would get some caramelly crunch with the coffee but it didn't work). How do you do your caramel? Thanks again for the inspiration, I haven't baked so much for a long time.

  • You should experiment. Add more or less of the ingredients you like... Work in small batches until your confident of what you're adding.

    I normally just put them in ziploc bags although I have also stacked them once cooled, in Tupperware, and just put them in the freezer like that... Because the kids take them too school, they stay fresh right up until they're ready to eat them!

  • I made the banana muffins today (I don't really know why but I feel like baking a lot lately), they turned out very well. I did it your way too, didn't really measure that much. Thanks so much for the video. I'll try the coffee ones soon to complete the "series." What do you think about the idea of choc chips in the coffee muffins?

  • I made the choc muffins and they're pretty good (can't taste the choc liqueur though)! I'm going to try the banana recipe tomorrow. By the way, how do you freeze them and what do you use to store them in (ziploc bags?)? They take up so much space and I don't have a big freezer. Any tips? Thanks for the video.

    Yes I freeze them! I always have a freezer full and it's handy when guests come around...

    and I also give them to my kids for school...

  • Hey, they look delicious but I wish you had shown us what it looks like to cut into them. You see, I don't know how to do it the way you do it (unmeasured and judged by consistency of batter) so I am wondering it they turned out OK! Also, why do you make so much in one go? Do you freeze them?
